Almond Crumb Coffee Cake

Ingredients

For the cake:

  • 1/2 cup softened butter
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 tsp. almond extract
  • 1/4 cup sour cream
  • 1 1/4 cups flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 2 tbs. milk

For the crumb:

  • 2 cups cake flour
  • 3/4 cup brown sugar
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 cup sliced almonds
  • 1/4 cup old fashioned oats
  • 3/4 cup melted butter

Instructions

For the cake:

  1. Preheat your oven to 350 degrees, and grease an 8 inch round or square cake pan. Line with parchment paper for easy removal.
  2. In a medium bowl, beat together the butter, sugar, and brown sugar until fluffy.
  3. Beat in the eggs, almond extract, and sour cream.
  4. Add in the flour, salt, baking powder, and milk, and beat until completely combined. The batter will be thick.
  5. Spread evenly in your baking pan and set aside while preparing crumb.

For the crumb:

  1. In a medium bowl, stir together the cake flour, brown sugar, salt, cinnamon, almonds, and oats.
  2. Pour the melted butter into the dry mixture, and work it together with a fork until completely coated.
  3. You should have a crumbly mixture that forms large chunks.
  4. Sprinkle over your prepared batter evenly, using the entire crumb mixture.
  5. Bake for 40-45 minutes, or until a cake tester comes out clean and the top is golden brown. Cool and enjoy.
