Kentucky Derby Pie

Servings 8 slices

Ingredients

  • 1 unbaked prepared pie crust
  • 1/2 cup melted butter
  • 4 eggs
  • 3/4 cup brown sugar
  • 3/4 cup light corn syrup
  • 3/4 cup flour
  • 1/4 cup white sugar
  • 1 tbs. vanilla extract or paste
  • 1 tsp. salt
  • 3/4 cup mini chocolate chips
  • 2 cups roughly chopped pecans

Instructions

  1. Preheat your oven to 350 degrees, and form your crust into a 9 inch pie plate. If you are not using a homemade crust, you can still work from a frozen crust here. Pop the crust into the freezer while you prepare the filling. While the oven preheats, place a large baking sheet lined with foil into the oven. Your pie will bake on top of this sheet, and it makes it easier to remove from the oven. Also, placing the pie onto a hot baking sheet will ensure that you get a fully baked crust.
  2. In a large bowl, whisk together the melted butter, eggs, brown sugar, corn syrup, flour, white sugar, vanilla, and salt until everything is well combined and smooth. Stir in the mini chocolate chips and chopped pecans until everything is well incorporated.
  3. Pour your filling into your chilled pie crust. Bake for 45-50 minutes, or until your pie is deeply golden brown all over, and does not jiggle in the middle. Cool the pie completely on the counter before slicing and serving- this pie is best when it has cooled for a couple of hours. Enjoy!
